Miso Salmon Noodle Salad
Ingredients

    For Miso Marinade & Dressing

  • 1/3 cup miso paste
  • 1 tsp white sugar
  • 1/3 cup rice wine vinegar
  • 3 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp sesame seeds
  • For Salad

  • 1 pack Fantastic Hokkein Fresh Noodles
  • 2x fresh salmon fillets
  • 1 carrot, thinly sliced into sticks
  • 2 radishes, thinly sliced
  • 1 cup sugar snap peas, halved
  • 1 cup chopped red cabbage
  • 1⁄2 cup fresh coriander leaves
  • 1⁄2 spring onion, sliced
  • Fresh chili, sliced (optional)
  • Sesame seeds, to dress
Method
  • Preheat airfryer to 160ºC.
  • Whisk together miso marinade/dressing. Reserve a few tablespoons and marinade salmon fillets with remaining mixture.
  • Transfer salmon into lined airfryer and cook for 8-9 minutes until cooked.
  • Meanwhile, cook noodles as per instruction. Drain and rinse well in cold water.
  • In a large bowl, toss noodles with remaining ingredients, then dress and garnish to taste.
  • Plate noodles with cooked salmon, top with sesame seeds and enjoy.
