Curried Prawn Noodles

Finished with spring onion and crunchy peanuts, it’s a vibrant, no-fuss dish that delivers maximum flavour with minimal effort.

Thin Hokkien Curried Prawn Noodles
Ingredients
  • 450g Fantastic Thin Hokkien Fresh Noodles
  • 2 tbsp vegetable oil
  • 2 bacon rashers, diced
  • 1 onion, cut into wedges
  • 2 garlic cloves, finely chopped
  • 1 tbsp grated ginger
  • 1 carrot, thinly sliced
  • 1 red capsicum, thinly sliced
  • 20 medium prawns
  • for sauce

  • 4 tbsp soy sauce
  • 2 tbsp Chinese cooking wine
  • 1 tsp curry powder
  • 1 tsp sugar
  • for garnish

  • 2 spring onion, thinly sliced
  • ¼ cup chopped peanuts
Method
  • Mix sauce ingredients in a small bowl.
  • Heat a large frypan over med/ high heat, add oil and bacon and fry until browned.
  • Add onion, garlic and ginger and fry for one minute.
  • Add carrot, capsicum and prawns and fry until prawns begin to turn opaque.
  • Meanwhile, prepare noodles according to packet instructions.
  • Place noodles into the frypan, pour over the sauce and toss to mix through.
  • Serve noodles garnished with spring onion and peanuts.
