Hokkien Dan Dan Noodles

Turn up the heat with these bold and addictive Dan Dan Noodles. Chewy Hokkien noodles are tossed through a silky, spicy sauce layered with nutty tahini, aromatic Sichuan pepper and chilli oil. Topped with crispy pork mince and fresh spring onion, every bite is punchy, vibrant and full of flavour. Quick to cook and seriously satisfying, it’s a go-to weeknight dish for anyone who loves a little spice and a lot of comfort.

Hokkien Dan Dan Noodles
Ingredients
  • 450g Fantastic Hokkien Fresh Noodles
  • For pork

  • 500g pork mince
  • 1 tbsp Chinese cooking wine
  • 2 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • ½ tsp white pepper
  • 1/2 tsp five spice
  • 2 tbsp vegetable oil
  • For sauce

  • 2 garlic cloves, finely chopped
  • ¼ cup chilli oil
  • ¼ cup light soy sauce
  • 2 tbsp tahini
  • 2 tsp ground Sichuan peppercorn
  • ½ tsp five spice
  • ½ tsp sugar
  • To garnish

  • 2 spring onion, finely sliced
  • ¼ cup chopped peanuts
Method
  • Mix together the pork mince, wine, soy sauces, pepper and five spice and allow to marinate for 10 minutes.
  • Meanwhile, mix together the sauce ingredients in a small bowl.
  • Heat a large frypan over high heat, add oil and marinated pork. Break up the pork with a wooden spoon and fry until cooked through and crispy.
  • Prepare noodles according to packet instructions, drain and place into a large bowl, retaining a little of the cooking water.
  • Pour over sauce and toss to combine, adding a little cooking water to loosen the sauce if necessary.
  • Serve noodles topped with pork mince and garnished with spring onion and peanuts. Stir fried green beans make an ideal side.
