4 spring onions, sliced, whites & greens separated
2 tbsp miso paste
2 tbsp smooth peanut butter
200ml coconut milk
750ml vegetable stock
1ā2 lime, cut into quarters
250g Firm tofu
2 tbsp soy sauce
OPTIONAL: chili oil, black sesame seeds, coriander
Method
Cook noodles as per pack instructions, then set aside.
Heat 1 tbsp of oil in a pot. Fry garlic and spring onion whites for 5 minutes. Stir in miso, peanut butter, coconut milk, vegetable stock and lime juice, bring to a boil, then let simmer.
Meanwhile, crumble tofu into a hot pan with 2 tbsp oil, frying until golden, then coat with soy sauce.
Place noodles into a bowl, serve broth over noodles and then dress with crispy tofu, chili oil, spring onion greens, black sesame seeds and coriander.
