These Crunchy Tuna Rice Balls are a quick, tasty snack that deliver big flavour with minimal effort. Soft sushi rice is mixed with tuna, Kewpie mayo and a hint of seasoning, then rolled in crushed Fantastic Seaweed Rice Crackers for a crisp, savoury coating.

  • 1 cup crushed Fantastic Seaweed Rice Crackers
  • 2 cups cooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 can tuna
  • 2 tbsp Kewpie mayo (adjust to taste)

Method
  • Crush the Fantastic Seaweed Rice Crackers into coarse crumbs using a food processor.
  • In a small bowl, combine cooked rice, rice vinegar, sugar, salt, drained tuna, and Kewpie mayo. Gently fold everything together and let the mixture cool until just warm.
  • Using a ⅓ cup measuring scoop, portion the rice mixture and shape into balls with your hands.
  • Roll each rice ball gently in the crushed seaweed crackers, pressing lightly so the crumbs stick.
  • Lightly spray the coated rice balls with oil. Air fry at 180°C for 8–10 minutes, flipping halfway, until golden and crunchy.
  • Top with extra Kewpie mayo and serve immediately.
