Instant Tantanmen Ramen

This Instant Tantanmen Ramen delivers big, rich flavour in minutes. A silky soy milk and chicken broth meets a punchy dashi–tahini soup base for that classic creamy, spicy Tantanmen taste. Tender noodles, crisp bok choy and savoury pork mince bring all the texture, while soft-boiled egg, sesame and fried shallots finish each bowl with flair. Comforting, bold and unbelievably quick... it’s your new weeknight ramen hero.

Instant Tantanmen Ramen
Ingredients
  • 2 cakes Fantastic Instant Noodles
  • 1 bok choy, halved
  • For Soup

  • 1 cup soy milk
  • 3 cups chicken stock
  • For Soup Base

  • 3 tbsp dashi tsuyu sauce
  • 1 tbsp tahini
  • 2 tsp chilli oil
  • For Pork

  • 1 tbsp vegetable oil
  • 250g pork mince
  • 1 garlic clove, finely chopped
  • 1 tsp grated ginger
  • 1 tbsp Chinese chilli bean sauce
  • 1 tbsp oyster sauce
  • For Garnish

  • 1 soft boiled egg, halved
  • 2 tbsp fried shallot
  • 2 tsp black & white sesame
Method
  • Place soy milk and chicken stock into a small saucepan, bring to the boil and simmer for 10 minutes.
  • Mix together the soup base ingredients in a small bowl, then divide between two soup bowls.
  • Heat a medium frypan over med/ high heat, add oil and pork, break up the pork with a wooden spoon and fry until browned.
  • Add garlic, ginger, chilli bean & oyster sauces and fry for 2 minutes.
  • Prepare noodles according to packet instructions, adding the bok choy for the final 30 seconds.
  • Pour the hot soup over the soup base in the bowls and stir to mix through.
  • Add noodles and top with the pork mix.
  • Garnish with bok choy, soft boil egg, fried shallot and sesame seeds.
